Ingredients ( serves 2 )
8 - 10 cracked ice cubes, 4 measures brandy, 3 measures white rum, 1 measure clear curcao, 1 measure lemon juice
Method
Put the cracked ice into a drinks shaker, pour over the brandy, white rum, curacao and lemon juice and shake vigorously until a frost forms. Then strain into two chilled wine glasses.
Singapore Gin Sling
Ingredients
10-12 ice cubes, 2 measures of gin, 1 measure cherry brandy, 1 measure lemon juice, 1 tsp grenadine, soda water.
Method
Put half the ice cubes into a cocktail shaker, pout in the gin, cherry brandy, lemon juice and grenadine, shake until a frost forms. Put the remainder of the ice cubes into a high glass strain over the cocktail over them, top up with soda water, decorate with cherries.
Long Island Iced Tea
Ingredients
10 - 12 ice cubes, 2 measures of vodka, 1 measure gin, 1 measure tequila, 1 measure white rum, half measure creme de menthe, 2 measures lemon juice, 1 tsp sugar syrup, coke
Method
Put 5 ice cubes into cocktail shaker, Pour in the vodka, gin, tequila, rum, creme de menthe, sugar syrup and lemon juice. Shake very very vigorously. Pour over the remainder of ice in a tall glass, top up with coke. Decorate with lime wedge.
Pina Colada
Ingredients
4 - 6 ice cubes, 2 measures white rum, 1 measure dark rum, 3 measures pineapple juice, 2 measure coconut cream.
Method
Crush the ice and place in a blender, add the white rum, dark rum, pineapple juice and coconut cream, blend until smooth. Pour straight over the remainder of ice in a tall glass, decorate with a slice of pineapple.
Daiquiri
Ingredients
4- 6 ice cubes, 2 measures white rum, 3/4 measure of lime juice, 1/2 tsp syrup
Method
Put ice cubes into cocktail shaker, pour over all the ingredients, shave very vigorously, pour into small saucer shaped glass.
Mai Tai
Ingredients
4-6 ice cubes, 2 measures white rum, 2 measures dark rum, 1 measure curacao, 1 measure lime juice, 1bsp orgest, 1 tsp grenadine
Method
Put the ice into a cocktail shaker Pour all the ingredients over the ice and shave vigorously until a slight frostiness forms. Strain into a tall slender glass. For decoration add a parasol, pineapple and cherries on a cocktail stick, and for that extra bit of romance, add an orchid.
Margarita
Ingredients
4-6 ice cubes, 3 measures tequila, 1 measure triple sec, 2 measures lime juice, coarse salt, lime wedge
Method
Rub the rim of a cocktail glass with the lime wedge, then dip the glass into the salt so the glass rim is covered in salt. Put the ice and the tequila, triple sec and lime juice into a cocktail shaker, shake very vigorously, strain into the glass and decorate with the lime slice.
Tequila Sunrise
Ingredients
4-6 ice cubes, 2 measures tequila, orange juice and 1 measure grenadine
Method
Put the ice into a tall glass, Pour the tequila over the ice, top up with the orange juice, stir. Slowly pour in the grenadine, and serve with a straw.
Bloody Mary
Ingredients
4-6 Ice cubes, 2 measures vodka, 6 measures tomato juice, 1/2 the juice from a lemon, pinch of celery salt, pinch of cayenne pepper, worcestershire sauce, tabasco sauce
Method
Put the ice into a drinks shaker, add a dash of worcestershire sauce and tobasco sauce, pour in the vodka, tomato juice, and lemon juice. Shake well. Strain into a tall glass add a pinch of cayenne pepper and celery salt. Decorate with a celery stick.
Black Russian
Ingredients
4-6 ice cubes, 2 measures vodka, 1 measure Tia Maria
Method
Put ice cubes into a small tumbler, pour over vodka and Tia Maria, stir.
